Mr. Doe has spent the past 15+ years working in wineries across the world, building his craft and learning international winemaking styles and techniques. From an experimental wine cellar in Weinsberg, Germany to harvests at Hartenberg Winery in Stellebosch, South Africa, Kim Crawford in Marlborough, New Zealand, Howard Park Wines in Margaret River, Western Australia, and Château Angélus in Bordeaux, France, Mr. Doe has brought substantial industry knowledge and experience to Détente.
He also heads up the winemaking team at a revered and classified winery in Paso Robles. A Cal Poly San Luis Obispo Agricultural Business graduate, he has come full circle back to the Central Coast and is now based in Paso Robles with his Australian wife, daughter, son, and English Labrador.
Over the past ten years, Détente Co-Owner Trevor Iba has worked in all aspects of the wine industry but primarily as the Director of Accounting and Finance in some of the Central Coast's finest wineries including Eberle Winery and CaliPaso. Trevor owns a mobile wine cross flow filtration company called TS Wine Services that helps filter for wineries across the Central Coast. With substantial industry and cross-platform experience, Trevor brings the business acumen to Détente.
Born and raised in Oxnard, California Trevor majored in Business Administration and Finance at UC Riverside. Both sports enthusiasts, Trevor and his wife Sarah met over a love of wine, hockey, and softball and now live in Atascadero with their two dogs Lady and Finn.
Julian’s focus at Détente is to execute creative strategy, combining his passion for wine with his love of brand expression. Julian has focused on design and strategy for the past 15 years; his strong design background enables him to collaborate and capture team and brand vision guiding cross-platform design and media development from concept to product.
Julian graduated with honors from Cal Poly San Luis Obispo with a BA in Art & Design and is also a partner in Virginia based winery Lightwell Survey. He currently works and lives in the Bay Area with his fiancé Sophie and their dog, Meatball.
Our Bordeaux varieties are sourced from Still Waters Vineyard on Paso Robles east-side in the El Pomar District. The vineyard established in 2003 by Paul Hoover is farmed sustainably and SIP Certified, producing premium Sauvignon Blanc, Cabernet Sauvignon, and Merlot grapes. The vineyard is situated on gentle sloping hillsides and enjoys light afternoon breezes and cooling Pacific Ocean winds in the evening creating optimal ripening conditions. The diurnal temperature swings and north to south vine orientation lengthen ripening, developing flavor and maturity. The soils are rich in calcareous, developed loams with some sandstone which support drainage and provide proper nutrition for the vines. Paul a Cal Poly, San Luis Obispo graduate has a degree in Agricultural Business and Mechanized Agriculture and was named 2017 Wine Industry Person of the Year and 2019 Grower of the Year by the Paso Robles Wine Country Alliance.
Rhône varietals Grenache Blanc and Grenache Noir are sourced from the Colburn Vineyard situated in the Adelaida District on the west-side of Paso Robles. New plantings of Syrah, Graciano and Pedro Ximenez are underway for Détente with the inaugural vintage set for 2020. The terrain is mostly rolling hills, with slopes between 10-20% and an elevation of 940ft. The vineyard comprises Nacimento-Los Osos and Linne Colado complex soils, these moderately deep well drained soils formed in the material weathered from calcareous sandstone and shale. Half of the vineyard has a north south orientation and new plantings are east west facing. Tom Colburn, a UC Berkeley graduate, was a professional baseball player who spent much of his professional career in Florence, Italy playing for La Fiorentina Baseball Club developed an appreciation for wine living so close to the Chianti region. An injury brought Tom’s career to an end so he came home to Calistoga to help on his family farm and in the meantime earned a degree in Viticulture Management with high honors from Santa Rosa Junior College under the supervision of famed Viticulturist Richard Thomas.
